Bring On Thanksgiving!

I was visiting a friend's blog today, and noticed her Thanksgiving theme wallpaper. Oh, that made me happy! I love Thanksgiving! It will be held at my house this year, with C.S.'s family, and I plan to use a new technique - crock-pots!

A friend showed me a fun website A Year of Slow Cooking and I have had such fun with it! I'm hoping to have my two crock-pots, and my mother's two, and have some wonderful, easy recipes cooking away! And the best part is, I will have to test them out before the big day comes. :D I never have enough fridge space or oven space on the day, even cooking some stuff ahead. Last year my mother made a mashed potato casserole, which I am going to try. I always have such a hard time making the mashed potatoes, because it is so last minute. This way it will be all done, and will just need to be warmed up!

I am starting this testing process today. I have some milk that is about to expire - so I MUST make eggnog! Yes, I must!! (This testing will be awesome!!)

Egg Nog (cooked)

1 gallon whole milk
9 egg yolks, (you can save the whites for making meringue cookies)
3 cups white sugar
1 tsp. grated nutmeg
2 TBS real vanilla (approved or only alcohol and vanilla listed, no vanillin)

Mix the milk, egg yolks and sugar in a large pot and bring to a rolling boil, stirring occasionally. WATCH THE POT CLOSELY so it does not boil over. As soon as it reaches a rolling boil, remove from heat and add nutmeg and vanilla. Allow to cool to room temperature; then refrigerate in large jars or a crock.

Thanksgiving is my favorite holiday, I've never actually hosted it ... I just get to be a guest :) I do often make and bring rolls, but I enjoy baking and it's all pretty relaxing. Mashed potatoes can be a pain (my hubby makes WONDERFUL mashed taters, so does my brother-in-law, they usually bring them). MIL always hosts, although my hubby might want to participate this year deep frying a turkey.

And I'll make my turkey cookies!

Good luck with yours! There was a crockpot story in the newspaper the other day (a different recipe every day?). I do love my crockpot ... need to use it more. I do often cook a turkey breast in it.
